Spicy Grilled Chicken Breast with Corn Pepper Relish

Ingredients
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1/4 tsp paprika
- 1/8 tsp ground red pepper
- 1/8 tsp black pepper
- 4 (6-oz) skinless, boneless chicken breast
- 1 tbs canola oil
- 2 cups whole-kernel corn, thawed
- 1 cup diced red bell pepper
- 3 tbs chopped onion
- 2 tbs minced fresh parsley
- 2 tbs fresh lime juice
Directions

Combine first 6 ingredients in a small bowl. Rub spice mixture over both sides of chicken breasts.

Heat oil in a grill pan over medium-high heat. Add chicken; cook 5 minutes on each side until done.

While chicken cooks, combine corn and remaining ingredients in a bowl. Serve with chicken.

Yield: 4 servings (serving size 4 chicken breasts and 1/2 cup relish.
