Carmel Nut Pie

Ingredients

  • Filling:
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa
  • 1/4 tsp. salt
  • 2 cups milk
  • 2 egg yolks
  • 1 Tbsp. butter
  • 1 tsp. vanilla extract
  • 1 (-inch) baked pie shell
  • Whipped cream for serving, optional
  • Topping:
  • 1 egg yolk
  • 1/4 cup granulated sugar
  • 2 1/2 Tbsp. milk
  • 1/4 tsp. vanilla extract
  • 2 Tbsp. butter
  • 1/4 cup chopped pecans

Directions

  1. To make the filling:

  2. In a medium saucepan, mix sugar, flour , cocoa and salt together. Add milk and cook over medium heat until mixture thickens and comes to a full boil. Add a small amount of the hot filling to the beaten egg yolks and mix well; add egg yolk mixture to the beaten egg yolk mixture to saucepan. Cook until it returns to a full boil. Remove from heat, stir in butter and vanilla; cool. Pour into baked pie shell.

  3. To make the topping:

  4. Beat egg yolk in a small saucepan. Gradually add sugar, mixing well. Stir in milk, vanilla and butter. Cook over medium heat until thick. Cool. Stir in pecans and spread over pie filling. Chill.

  5. To serve: Garnish with whipped cream, if desired.
