Apple, Sausage, and Fennel Dressing

Ingredients

  • 1/4 lb. sweet Italian sausage, casings removed
  • 1 Tbsp. olive or vegetable oil
  • 2 medium onions, diced
  • 1 fennel bulb, trimmed and diced
  • 1 tsp fennel seed
  • 1 apple, peeled cored and diced
  • 1 bag (14.oz) cubed country style stuffing mix
  • 1 can (14 1/2 oz.) chicken broth
  • 2 cups apple juice
  • 2 Tbsp butter or margarine

Directions

  1. In large skillet, cook sausage in oil over medium- high heat, breaking into pieces until browned, 5 to 8 minutes.

  2. With slotted spoon, remove sausage and drain on paper towels. Discard all but 1 Tbsp. fat. Cook onion, fennel seed in skillet until tender, 8 to 10 minutes. Add apple and cook 2 minutes.

  3. Spray 13 × 9 inch baking dish (or 3 1/2 quart shallow casserole) with vegetable cooking spray.

  4. Toss stuffing mix with sausage and onion mixture; stir in chicken broth and apple juice.

  5. Place in baking dish an dot with butter. Cover and refrigerate 24 to 48 hours. Remove dressing from refrigerator 2 hours before baking.

  6. Heat oven to 325 degrees. cover with foil and bake 45 minutes. Uncover and bake 40 miutes longer.
