Apple, Sausage, and Fennel Dressing

Ingredients
- 1/4 lb. sweet Italian sausage, casings removed
- 1 Tbsp. olive or vegetable oil
- 2 medium onions, diced
- 1 fennel bulb, trimmed and diced
- 1 tsp fennel seed
- 1 apple, peeled cored and diced
- 1 bag (14.oz) cubed country style stuffing mix
- 1 can (14 1/2 oz.) chicken broth
- 2 cups apple juice
- 2 Tbsp butter or margarine
Directions

In large skillet, cook sausage in oil over medium- high heat, breaking into pieces until browned, 5 to 8 minutes.

With slotted spoon, remove sausage and drain on paper towels. Discard all but 1 Tbsp. fat. Cook onion, fennel seed in skillet until tender, 8 to 10 minutes. Add apple and cook 2 minutes.

Spray 13 × 9 inch baking dish (or 3 1/2 quart shallow casserole) with vegetable cooking spray.

Toss stuffing mix with sausage and onion mixture; stir in chicken broth and apple juice.

Place in baking dish an dot with butter. Cover and refrigerate 24 to 48 hours. Remove dressing from refrigerator 2 hours before baking.

Heat oven to 325 degrees. cover with foil and bake 45 minutes. Uncover and bake 40 miutes longer.
