Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp. ginger
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup unsulfured molasses
- 1/4 cup granulated sugar
- 2 Tbsp. vegetable oil
- 2 large egg whites
- 1/2 tsp. vanilla extract
- 1 1/2 cups oats, uncooked
- 1 Granny Smith apple, peeled, diced
- Lemon glaze:
- 1 cup confectioners' sugar, sifted
- 1 Tbsp skim milk
- 1/4 tsp. grated lemon peel

Preheat oven to 350 degrees. Coat 2 cookie sheets with vegetable cooking spray.

Combine flour, ginger, baking soda and salt in bowl. I separate bowl, beat molasses, sugar, oil, egg whites and vanilla until smooth. Beat in dry ingredients just until combined. Stir in oats and apple.

Drop batter by teaspoonfuls at least 2 inches apart onto prepared cookie sheets. Bake 10 to 12 minutes, until edges are golden.

Transfer to wire racks to cool. Glaze tops of cookies.

Lemon Glaze: Blend all ingredients in bowl until well mixed.
