Apple Spice Cupcakes

Ingredients

  • 3 apples, pared, cored and diced
  • 1/4 cup water
  • 1 1/4 cups sifted all-purpose flour
  • 2 Tbsp. unsweetened cocoa
  • 1/2 cup sugar
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground allspice
  • 2 eggs, separated
  • 1/4 cup raisins

Directions

  1. Combine diced apples and water in a small saucepan. Simmer, covered, until tender, about 5 minutes. Cool.

  2. Sift flour, cocoa, sugar, baking powder, baking soda, salt, cinnamon and allspice into a mixing bowl. Add prepared apples and egg yolks; beat until blended. Stir in raisins.

  3. Beat egg white4s until stiff but not dry; fold into batter. Fill sixteen 2 1/2-inch nonstick muffin pan cups about half full with batter (or fit paper baking cups into regular 2 1/2-inch muffin-pan cups).

  4. Bake in moderate oven (35o degrees) 30 minutes, or until tops of cupcakes spring back when lightly pressed with fingertip. Cool on wire racks. Sprinkle very lightly with confectioners’ sugar, if you wish.
