Ingredients
- 2 1/2 lb potatoes- diced rather small
- 2 finely diced garlic buds
- Some red and/or green peppers-thinly sliced
- Olive oil- about 1/4 C
- 1/2 stick melted butter
- Salt/Pepper
Directions

Bake 425 for 20-25 minutes, shaking well at least once

Oven up to 500 and bake 10-15 minutes more- until crisp
