Roast Potatoes

Ingredients

  • 2 1/2 lb potatoes- diced rather small
  • 2 finely diced garlic buds
  • Some red and/or green peppers-thinly sliced
  • Olive oil- about 1/4 C
  • 1/2 stick melted butter
  • Salt/Pepper

Directions

  1. Bake 425 for 20-25 minutes, shaking well at least once

  2. Oven up to 500 and bake 10-15 minutes more- until crisp

  3. Salt and Pepper to taste
