Mushrooms-Stuffed

Can make without prosciutto

Ingredients

  • Mushrooms-remove stems and save(only use 1/2-3/4 C chopped stems in mixture)
  • 2 T butter
  • 3-4 oz prosciutto-finely chopped
  • 1/4 C chives- finely chopped
  • 6-8 oz cream cheese
  • 1/2 t lemon zest
  • tarragon- dash
  • 1/2 t black pepper
  • 1 T dijon mustard

Directions

  1. Saute prosciutto, chives, mushroom stems in butter until crisp

  2. Lower heat and add cream cheese, lemon zest, mustard tarragon and pepper

  3. Stir until mixture is combined

  4. Fill mushroom caps

  5. Bake 350 for 20 minutes
