Lentil Soup

Serves 8 people

Ingredients
- 1 Tbsp olive oil
- 1 Tbsp butter
- 2 cups green lentils, rinsed
- 4 cups water
- 1 medium onion, chopped
- 8-10 baby carrots, chopped into 1/3rds
- 3 stalks celery, chopped
- 1 pack frozen chopped spinach, thawed
- 1-28 oz. can chopped tomatoes
- 2 cloves garlic, chopped
- (Add one or more of the following meats)
- 3 spicy sausages, casings removed
- 2 cups diced ham
- 2 cups ground beef
- (Add the following to taste)
- black pepper
- salt
- garlic powder
- cayenne pepper
- Johnny's Garlic Seasoning (from Costco)
Directions

ute the meat in olive oil and butter for 2-3 minutes. Add rest of ingredients and cook on medium heat for 25 minutes. Reduce to low heat for another 10-15 minutes. Serves 8. Freezes well.
