Glorified Pumpkin Pie

Ingredients
- 2 eggs
- 3/4 cup sugar
- 1 cup pumpkin (you can use canned unseasoned pumpkin, but they recommend using freshly cooked pie pumpkin)
- 1 envelope Dream Whip, dessert topping mix
- 1 package unflavored gelatin
- 2 tablespoons cold water
- 1/2 cup nuts, chopped
- Cinnamon to taste
- Cloves to taste
- Just a tiny smidgen of nutmeg or allspice
- 1 baked pie shell
- Cool whip if desired.
Directions

Pre-bake and cool pie crust.

Beat eggs, add sugar while beating a little at a time.

Combine egg/sugar mixture with spices and pumpkin.

Cook for 15 minutes in double boiler.

Add gelatin that has been dissolved in 2 tablespoons cold water.

Chill in refrigerator.

Whip dessert topping/Dream Whip according to package instructions. Fold into chilled pumpkin mixture.

Pour into pie shell. Arrange a few nuts/pecans around the edge of the pie for decoration.

Chill over night. Serve with a dollop of Cool Whip if desired.
