Ingredients
- 1 cup bulgur wheat
- 2 cups boiling water
- 2 chopped tomatoes
- 1 chopped onion
- 4 scallions, minced
- 2 cups parsely, minced
- 1/4 cup fresh leon juice
- 1/4 cup olive oil
- 1 cup fresh mint, minced
- salt and pepper to taste
Directions

Add boiling water to bulgur, cover with tight-fitting lid and let sit for 30 minutes.

Drain excess water, and add remaining ingredients to bulgur. Refrigerate.
