SOUTHERN SUCCOTASH PASTA SALAD

Ingredients

  • 1 (12 ounce) package Southern Style Fordhook frozen Lima Beans
  • 3/4 cup water
  • 1 1/2 cups frozen corn
  • 2 cups uncooked garden rotini pasta, cooked according to package directions to al dente (could use any pasta you like)
  • 1 cup chopped, cooked ham
  • 4 or 5 bacon slices, cooked till crispy and crumbled
  • 1/2 cup chopped green onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon celery seeds
  • 1 tablespoon sugar
  • 1 tablespoon white vinegar
  • 1/2 cup mayonnaise or could use Miracle Whip

Directions

  1. Combine lima beans, corn and water. Microwave 10 minute or until beans are soft and drain. Combine beans and corn with pasta, ham, bacon, onion, salt, pepper, celery seeds, sugar, vinegar and mayonnaise in a large bowl. Refrigerate several hours or overnight before serving. Makes 6 cups or servings. Enjoy!
