Ingredients
- 1 Tbsp. oil
- 1 clove garlic, minced
- 2 beef bouillon cubes
- 3 Tbsp. fine soft bread crumbs
- 1 tsp. salt
- Parsley (optional)
- 2 Tbsp. minced onion
- 1 can (8 oz.) tomato sauce
- 4 cups water
- 1/2 lb. ground beef
- 2 Tbsp. rice
- 1 egg
- Freshly ground pepper
Directions

In a large saucepan heat oil and saute onion and garlic until golden brown. Add tomato sauce, water and bouillon cubes and heat to boiling.

Meanwhile, combine beef, bread crumbs, rice, egg, 1/2 tsp. salt and pepper to taste. Shape in 1 inch meatballs (make 18-20). Carefully drop into simmering soup, cover and cook over low heat 25 minutes. Season with remaining 1/2 tsp. salt and pepper to taste. Garnish with parsley.
