Risotta Scrambled Egg Bruschetta

Ingredients

  • 4 Eggland's Best Eggs
  • 1/2 cup ricotta cheese
  • salt and pepper to taste
  • 1/2 cup arugula
  • 1 slice Italian bread
  • 2 Tbsp. olive oil
  • 1 Tbsp. unsalted butter

Directions

  1. Toast 1 slice of Italian bread; set aside.

  2. In a medium bowl, beat Eggland’s Best eggs with salt and pepper until well blended.

  3. Heat butter in a nonstick skillet over medium heat; pour in eggs. When eggs begin to set, gently pull eggs across pan with spatula.

  4. Spread ricotta across each piece of toast; top with arugula and eggs.

  5. Lightly drizzle with olive oil and serve.
