Risotta Scrambled Egg Bruschetta

Ingredients
- 4 Eggland's Best Eggs
- 1/2 cup ricotta cheese
- salt and pepper to taste
- 1/2 cup arugula
- 1 slice Italian bread
- 2 Tbsp. olive oil
- 1 Tbsp. unsalted butter
Directions

Toast 1 slice of Italian bread; set aside.

In a medium bowl, beat Eggland’s Best eggs with salt and pepper until well blended.

Heat butter in a nonstick skillet over medium heat; pour in eggs. When eggs begin to set, gently pull eggs across pan with spatula.

Spread ricotta across each piece of toast; top with arugula and eggs.

Lightly drizzle with olive oil and serve.
