Almond Chicken Salad Shanghai

Ingredients

  • 2 1/2 lbs. boned and skinned chicken breast
  • 2 Tbsp, soy sauce
  • 1 tsp. dry minced garlic
  • 2 Tbsp. vegetable oil
  • 3 cups sliced celery
  • 2 lbs. tomatoes, diced
  • 1/2 cup chopped parsley
  • 1 cup slivered almonds, toasted and divided
  • Ginger Dressing:
  • 2/3 cup sugar
  • 2 1/2 tsp. ground ginger
  • 1 1/2 tsp. salt
  • 1/2 cup white vinegar
  • 1 cup vegetable oil
  • 3 Tbsp. sesame seeds, toasted
  • Lettuce leaves

Directions

  1. Cut chicken into 1-inch pieces. Combine chicken, soy sauce, and garlic; set aside.

  2. Saute chicken mixture in hot oil in a wok or large skillet 10 minutes or until chicken is tender and liquid is absorbed. Remove chicken to a large bowl; cover and chill.

  3. Combine chicken, celery, tomatoes, parsley, and 3/4 cup almonds. Stir in 1 1/3 cups Ginger Dressing, and toss gently. Cover and chill.

  4. Just before serving, line a large serving platter with lettuce leaves. Spoon chicken salad on lettuce. Sprinkle remaining 1/4 cup almonds over salad. Serve with remaining Ginger Dressing.

  5. Ginger Dressing:

  6. Combine first 4 ingredients in container of an electric blender or food processor. Cover and blend at high speed about 5 seconds. With blender on high, gradually add oil. Blend about 30 seconds or until thickened. Stir in sesame seeds.
