Ingredients
- 2 1/2 lbs. boned and skinned chicken breast
- 2 Tbsp, soy sauce
- 1 tsp. dry minced garlic
- 2 Tbsp. vegetable oil
- 3 cups sliced celery
- 2 lbs. tomatoes, diced
- 1/2 cup chopped parsley
- 1 cup slivered almonds, toasted and divided
- Ginger Dressing:
- 2/3 cup sugar
- 2 1/2 tsp. ground ginger
- 1 1/2 tsp. salt
- 1/2 cup white vinegar
- 1 cup vegetable oil
- 3 Tbsp. sesame seeds, toasted
- Lettuce leaves

Cut chicken into 1-inch pieces. Combine chicken, soy sauce, and garlic; set aside.

Saute chicken mixture in hot oil in a wok or large skillet 10 minutes or until chicken is tender and liquid is absorbed. Remove chicken to a large bowl; cover and chill.

Combine chicken, celery, tomatoes, parsley, and 3/4 cup almonds. Stir in 1 1/3 cups Ginger Dressing, and toss gently. Cover and chill.

Just before serving, line a large serving platter with lettuce leaves. Spoon chicken salad on lettuce. Sprinkle remaining 1/4 cup almonds over salad. Serve with remaining Ginger Dressing.

Ginger Dressing:

Combine first 4 ingredients in container of an electric blender or food processor. Cover and blend at high speed about 5 seconds. With blender on high, gradually add oil. Blend about 30 seconds or until thickened. Stir in sesame seeds.
