Garlic Tortellini Soup

Ingredients

  • 1 tbsp butter
  • 2 garlic cloves, minced
  • 3- 14.5 oz cans chicken broth
  • 9 oz package refrigerated cheese tortellini
  • 14.5 oz can diced tomatoes with green chilies, undrained
  • 10 oz package frozen chopped spinach, thawed and squeezed dry

Directions

  1. In a large saucepan, heat butter over medium heat; saute the garlic until tender, about 1 minute. Stir in broth; bring to a boil. Add tortellini; cook, uncovered, until tender, 7-9 minutes. Stir in diced tomatoes and spinach; heat through.
