Cheddar Broccoli Soup

Ingredients

  • 1 quart chicken broth
  • 2-4 c chopped broccoli
  • 3-4 carrots, chopped
  • 1/2 onion, chopped
  • 3/4 c flour
  • 3/4 c butter, melted
  • salt and pepper
  • 4 c half-and-half
  • 2-4 c grated sharp cheddar cheese

Directions

  1. In a large pot, boil chicken broth, broccoli, carrots, and onions for 10 minutes.

  2. Make a paste with flour and melted butter and salt and pepper.

  3. Add half-n-half to paste, then add to soup.

  4. Bring up to temperature, then add the cheese.
