Mexican Sausage Crostini

Ingredients

  • 6 eggs
  • 4 green onions, chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 lb pork sausage, cooked
  • 1 baguette, cut into rounds
  • pico de gallo
  • Monterey Jack, shredded
  • Cilantro
  • Sour cream

Directions

  1. Scramble eggs with green onions, salt and pepper. Stir in sausage.

  2. Top baguette toasts with pico de gallo, egg mixture and cheese. Bake crostini at 400 for 1-2 minutes.

  3. Top with cilantro and sour cream.
