Chorizo Pumpkin Pasta

Ingredients

  • 3 cups uncooked gemelli or spiral pasta
  • 12 oz package fully cooked chorizo chicken sausage links, sliced
  • 1 cup canned pumpkin
  • 1 cup half-and-half
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups shredded manchego cheese
  • Minced fresh cilantro

Directions

  1. Cook pasta as directed. Drain, reserving 3/4 cup pasta water.

  2. Meanwhile, in a large skillet, saute sausage over medium heat until lightly browned; reduce heat to medium-low. Add pumpkin, cream, salt and pepper; cook and stir until heated through. Toss with pasta and enough pasta water to moisten; stir in cheese. Sprinkle with fresh cilantro.
