Spice-Braised Pot Roast

Ingredients

  • 2.5 lb boneless beef chuck roast
  • 14.5 oz can diced tomatoes, undrained
  • 1 medium onion, chopped
  • 1/4 cup white vinegar
  • 3 tbsp. tomato puree
  • 1 tbsp. poppy seeds
  • 1 bay leaf
  • 2 1/4 tsp sugar
  • 2 tsp Dijon
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1/2 tsp ground ginger
  • 1/2 tsp lemon juice
  • 1/2 tsp dried rosemary, crushed
  • 1/4 tsp ground cumin
  • 1/4 tsp turmeric
  • 1/4 tsp crushed red pepper flakes
  • 1/8 tsp ground cloves
  • Hot cooked egg noodles

Directions

  1. Place the roast in a slow cooker. Mix all remaining ingredients except noodles; add to roast. Cook, covered, on LOW 7-9 hrs. Discard bay leaf. Skim fat; thicken juices. Serve roast with noodles and gravy.
