Cajun Sloppy Joes

Ingredients

  • 2 lb. ground chuck
  • 2 cups diced yellow onions
  • 1 green bell pepper, diced
  • 1 cup diced celery
  • 2 tbsp. minced fresh garlic
  • 2- 10.75 oz cans tomato puree
  • 1/4 cup tomato paste
  • 1/4 cup packed brown sugar
  • 1/4 cup water
  • 1 tbsp. Tabasco sauce
  • 2 tsp kosher salt
  • 2 tsp paprika
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 2 tsp black pepper
  • 2 loaves soft French bread, halved lengthwise, slightly hollowed, quartered, and toasted

Directions

  1. Brown chuck in a saute pan over medium-high heat until cooked through, crushing with a potatoes masher; drain all but 1 tbsp. drippings. Transfer chuck to a slow cooker.

  2. Saute onions, bell pepper, and celery in reserved drippings in same pan over medium heat until softened, 5-6 minutes. Add garlic and cook one minute more; transfer to slow cooker.

  3. Whisk together tomato puree, tomato paste, brown sugar, water, Tabasco, salt, paprika, oregano, thyme, and black pepper, then add to slow cooker. Cover slow cooker and cook on LOW 4 hours. Serve sloppy Joes on toasted French bread.
