Ingredients
- 2 lbs medium russet potatoes
- Kosher salt
- 1 cup milk
- 4 tbsp. unsalted butter
- 1 cup shredded Cheddar cheese
- Crumbled cooked bacon and sliced scallions, for topping
Directions

Put the potatoes in a large pot; cover with cold water and season with salt. Bring to a simmer and cook until the potatoes are tender, about 45 minutes; drain. Let cool slightly, then peel and return to the pot.

Heat the milk and butter in a small saucepan. Add to the potatoes and mash with a potato masher; stir in the cheese and season with salt. Transfer to a bowl and top with bacon and scallions.
