Coconut Curry Lentils

Ingredients

  • Rice for serving over
  • 1 yellow onion
  • 2 cloves garlic
  • 2 cups brown lentils
  • 1 sweet potato or frozen butternut squash cubes
  • 3 Tbsp curry powder (hot or mild)
  • 15oz. can petite diced tomatoes
  • 15oz. can tomato sauce
  • 3 cups vegetable broth
  • 14oz. can coconut milk (full fat)

Directions

  1. Saute onion and garlic with olive oil

  2. Add remainder of ingredients except for coconut milk

  3. Bring to a boil, then simmer for 30 min

  4. Run mixture through the blender

  5. Stir in coconut milk until heated

  6. Serve over rice
