Ingredients
- Rice for serving over
- 1 yellow onion
- 2 cloves garlic
- 2 cups brown lentils
- 1 sweet potato or frozen butternut squash cubes
- 3 Tbsp curry powder (hot or mild)
- 15oz. can petite diced tomatoes
- 15oz. can tomato sauce
- 3 cups vegetable broth
- 14oz. can coconut milk (full fat)
Directions

Saute onion and garlic with olive oil

Add remainder of ingredients except for coconut milk

Bring to a boil, then simmer for 30 min

Run mixture through the blender

Stir in coconut milk until heated

Serve over rice
