Charred Carrots and Shallots

Ingredients

  • 3 lbs carrots
  • 3 tbsp. olive oil
  • Salt and pepper
  • 3 shallots, sliced
  • Chopped parsley
  • Crumbled goat cheese

Directions

  1. Peel carrots and cut in half lengthwise. Toss with olive oil and season with salt and pepper. Broil, stirring occasionally, until tender and charred in spots, 15 minutes; stir in shallots during the last 5 minutes of broiling. Toss with parsley and top with goat cheese.
