Ingredients

  • 2 lbs. Yukon Gold potatoes, peeled
  • 2 tbsp. butter
  • 2 tbsp. olive oil
  • 1/2 onion, chopped
  • 1/2 tsp paprika
  • 1 garlic clove, finely chopped
  • salt and pepper

Directions

  1. Cut potatoes into cubes. Cook in salted boiling water until just tender, about 6 minutes; drain.

  2. Heat butter and olive oil in a large cast-iron skillet over medium heat. Add the potatoes and spread them out.

  3. Cook, undisturbed, until the potatoes start browning, about 5 minutes, then add onion and paprika. Flip the potatoes and cook 5 more minutes. Stir, then continue cooking until the potatoes are mostly browned, about 5 more minutes. Stir in garlic; cook 2 more minutes. Season with salt and pepper.
