Ingredients
- 1/4 stick unsalted butter, at room temp
- 4 hearty country bread slices
- 3 oz. grated sharp Cheddar
- 3 oz. grated Gruyere
- 1 tsp dry mustard powder
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
Directions

Butter both sides of the bread. Combine the cheddar, gruyere, mustard, paprika and pepper in a small bowl.

Fold a 24-inch long piece of foil in half, short end to short end. Fold the sides up, forming a tray. Spritz the tray with a small amount of vegetable oil, then repeat with another piece of foil.

Divide the cheese mixture evenly between the two trays and set aside.

Set the cheese-filled trays on the grill over indirect heat. Cook for 6-9 minutes, until the cheese melts and bubbles around the edges.

Grill the bread for 1-2 minutes per side over direct heat.

Place 1 slice of bread on another piece of foil. Open one end of the cheese tray slide the cheese onto 1 slice of bread. Top with a second slice, then fold the foil around the sandwich.

Repeat with remaining cheese and bread and return the sandwich packets to the grill over indirect heat for 1-2 minutes.
