Almost No-Bake Peanut Butter Marshmallow Cheesecake Bars

Ingredients
- For the Crust:
- 1 1/2 cups finely crushed chocolate sandwich cookies (about 20 cookies) such as Oreos
- 1/4 cup butter, melted
- 1 Tbsp. granulated sugar
- For the Peanut Butter Layer:
- 1 12 cups peanut butter
- 1 1/2 cups confectioners' sugar
- For the cheesecake layer:
- 10 oz. marshmallow fluff
- 2 (8oz.) pkg. cream cheese, softened

Heat oven to 350 degrees. Line an 8-inch square baking dish with parchment paper, leaving overhang on two opposite sides.

In a food processor, pulse cookies to fine crumbs.

Combine cookie crumbs, melted butter and granulated sugar and press mixture evenly in the bottom of the prepared pan. Bake for 7 minutes. Cool completely.

In a medium bowl, combine the peanut butter and confectioners sugar and beat with an electric mixer until smooth. Spread peanut butter mixture over cooled cookie crust.

In a mixing bowl, beat the marshmallow fluff ad cream cheese with an electric mixer until smooth and fluffy. Spread cream cheese mixture over the peanut butter layer. Refrigerate until firm, at least 3 hours, before cutting into squares. Store in refrigerator.
