Alsace Onion Tart

Ingredients
- 1 (9-inch) pie crust in a ceramic quiche pan or glass pie plate
- 6 slices bacon
- 1 Tbsp. reserved bacon drippings or olive oil
- 2 large onions, thinly sliced (about 4 cups)
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 3/4 cup milk or light cream
- 3 large eggs
- 1/8 tsp. grated nutmeg

Preheat oven to 400 degrees. Bake pie crust 10 to 12 minutes, or until very light brown.

While crust is baking, arrange strips of bacon on a paper towel-lined microwave meat rack or microwavable pan. Cover with another paper towel and microwave on high 6 minutes, or until bacon is crisp.

Place onion in a 2-quart glass measure or cassero9le. Add 2 Tbsp. bacon drippings or use olive oil. Cover with vented plastic wrap or lid. Stirring midway through cooking, microwave on high 12 minutes, or until onions are very tender. Add salt and pepper.

Transfer onion to baked pie crust. Lightly beat milk with eggs and nutmeg. Pour over onion; crumble bacon and sprinkle on top. Rotating midway through cooking, microwave on high 10 to 12 minutes, or until center jiggles only slightly. Cool 10 to 15 minutes before slicing.

To bake in a conventional oven: Do not bake pie crust. Assemble as above, bake 35 to 40 minutes in a 350 degree preheated oven.
