Ingredients
- 1 1/4 to 1 1/2 lbs. boneless beef chuck, cut in 3/4 inch cubes
- 3 set of chicken giblets (heart, gizzards, and livers)
- 1 medium potato, peeled and cubed
- 1 medium onion, coarsely chopped
- 2 celery stalks, chopped
- 4 slices bread
- 1 tsp. poultry seasoning or 3/4 tsp. dry sage
- 1/4 tsp. dried thyme
- 1/8 tsp. freshly ground black pepper
- 1 1/2 tsp. salt
- 1/2 cup chicken broth

Place beef cubes in a pan; cover with water ad simmer until tender (about 50 minutes). Cool in broth//.

Meanwhile, put giblets into another pan; cover with water and simmer for 20 minutes. Remove broth and let cool.

Put beef, hearts, livers and fragments of flesh from the gizzards into the bowl of a food processor and process briefly. Add potato, onion, celery, bread, poultry seasoning, thyme, pepper, and salt. Process again.

Pour in enough chicken broth to make the mixture cohere.

This stuffing is good in chicken or turkey. It can also be used to stuff vegetables such as squash or cabbage leaves. Enough for a 12 lb. turkey.

To serve it as a side dish, bak covered in a greased pan at 350 degrees for 30 minutes.
