Cheese Biscuits

Ingredients
- 1 3/4 c. all purpose flour
- 2 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1/3 c. butter or margarine
- 1 c. cheddar cheese
- 3/4 c. milk
- Cooking oil
Directions

Preheat oven to 425oF.

Mix flour with baking powder and salt.

Cut in butter (with pastry cutter or fork).

Add 1 c. cheese and toss with flour mixture.

Add milk and stir quickly (with a fork)

until flour is incorporated.

Pour about 2 Tb. of cooking oil onto a cookie sheet.

Spread oil to cover pan with ONE hand. (I use my left hand.)

Scoop up a forkful of biscuit dough.

Slide dough off onto cookie sheet with oiled (left) hand.

Flip dough ball over with that (left) hand
-
(so both sides of dough are now oiled).

Pat dough into semblance of a biscuit shape.

(Just a pat or two on top and “squoosh” the sides; do NOT work the dough).

Bake at 425oF for 10 to 15 minutes until tops are light brown.

Keep an eye on these;
-
the cheese biscuits tend to burn more easily than regular.
