Sauteed Hominy with Bacon & Tomato

Ingredients

  • 4 strips thick-sliced bacon, sliced
  • 1 tbsp. olive oil
  • 1/2 cup diced onion
  • 1 tbsp. minced fresh garlic
  • 29 oz can white hominy, drained and rinsed
  • 1 cup sliced grape tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp. fresh lime juice
  • Salt to taste

Directions

  1. Cook bacon in oil in a saute pan until crisp; transfer to a paper towel-lined plate.

  2. Sweat onion and garlic in drippings in same pan over medium-low heat until softened, 5-7 minutes. Increase heat to medium-high.

  3. Add hominy and cook until heated through, 2-3 minutes. Stir in tomatoes until heated through.

  4. Off heat, stir in cilantro and lime juice; season hominy with salt.
