Ingredients
- 4 strips thick-sliced bacon, sliced
- 1 tbsp. olive oil
- 1/2 cup diced onion
- 1 tbsp. minced fresh garlic
- 29 oz can white hominy, drained and rinsed
- 1 cup sliced grape tomatoes
- 1/4 cup chopped fresh cilantro
- 1 tbsp. fresh lime juice
- Salt to taste
Directions

Cook bacon in oil in a saute pan until crisp; transfer to a paper towel-lined plate.

Sweat onion and garlic in drippings in same pan over medium-low heat until softened, 5-7 minutes. Increase heat to medium-high.

Add hominy and cook until heated through, 2-3 minutes. Stir in tomatoes until heated through.

Off heat, stir in cilantro and lime juice; season hominy with salt.
