Anderson House Inn Brunch Casserole

Ingredients

  • 1/4 cup butter or margarine
  • 4 cups seasoned croutons or a combination of seasoned and unseasoned croutons
  • 2 cups shredded cheese
  • 1 to 2 slices pepper jack cheese
  • 2 cups milk
  • 8 eggs or 1 carton egg substitute with onions and peppers
  • 1/2 tsp. dry mustard
  • 12 oz. bacon, cooked and crumbled or cubed ham

Directions

  1. Heat oven to 325 degree.

  2. Place butter in an 11 × 7 inch baking dish. Place dish in oven just until butter melts. Remove from oven and tilt dish to thoroughly coat bottom and sides with butter.

  3. Arrange croutons in dish, then sprinkle the shredded cheese over the croutons and top with sliced cheese; set aside.

  4. In a bowl, whisk together the milk, eggs and mustard. Pour egg mixture over cheese and sprinkle with bacon or ham.

  5. Bake at 325 degrees 40 to 50 minutes or until set. Let stand at room temperature 5 to 10 minutes before serving.
