Angel Cake

Ingredients

  • 1 1/4 cup sugar
  • 1 cup sifted cake flour
  • 1 cup egg whites (8 to 10 eggs)
  • 1 tsp. cream of tartar
  • 1/2 tsp. salt
  • 3/4 tsp. vanilla
  • 1/4 tsp. almond extract

Directions

  1. Sift 1/4 cup sugar and flour together 4 times.

  2. Beat egg whites, cream of tartar and salt to a stiff foam. Add remaining sugar, a little at a time, beating it in, preferably with a rotary beater. Add flavorings.

  3. Fold in flour, sifting a little at a time over egg white and sugar mixture. Pour into large ungreased tube pan; cut through batter with a spatula to remove large air bubbles.

  4. Bake in a slow oven (275 degrees) 30 minutes. Raise heat to 300 degrees, and bake 40 to 45 minutes longer. Remove from oven; invert pan 1 hour.
