Ingredients
- Crust:
- 3 egg whites
- 1/2 tsp. cream of tartar
- 2/3 cup sugar
- 1/2 cup chopped almonds
- Pink Catawba Filling:
- 1 pkg. gelatin
- 5 Tbsp. sugar, divided
- 1/4 tsp. salt
- 2 eggs, separated
- 1 cup pink Catawba wine
- 1 tsp. lemon juice
- 5 drops red food coloring
- 1 cup whipped cream
Directions

In a small mixing bowl, beat egg whites and cream of tartar until soft peaks form. Gradually beat in sugar, 1 Tbsp. at a time. Continue beating 15 to 20 minutes or until very stiff. Fold in chopped almonds.

Spread in a greased 9 inch pie plate, making a rim on the sides.

Bake in 275 degree oven 1 hour; remove from oven and cool completely.

Filling:

Mix gelatin, 2 Tbsp. sugar and salt. Beat egg yolks, water and 1/2 cup wine; stir into gelatin mixture. Place over low heat; stir until thickened.

Remove from heat. Stir in remaining wine, lemon juice, and food coloring. Chill until mounds slightly.

Beat egg whites until peaks form. Fold into gelatin; fold in whipped cream. Turn into crust. Chill until set. Garnish with whipped cream.
