Angel Crusted Pink Catawba Pie

Ingredients

  • Crust:
  • 3 egg whites
  • 1/2 tsp. cream of tartar
  • 2/3 cup sugar
  • 1/2 cup chopped almonds
  • Pink Catawba Filling:
  • 1 pkg. gelatin
  • 5 Tbsp. sugar, divided
  • 1/4 tsp. salt
  • 2 eggs, separated
  • 1 cup pink Catawba wine
  • 1 tsp. lemon juice
  • 5 drops red food coloring
  • 1 cup whipped cream

Directions

  1. In a small mixing bowl, beat egg whites and cream of tartar until soft peaks form. Gradually beat in sugar, 1 Tbsp. at a time. Continue beating 15 to 20 minutes or until very stiff. Fold in chopped almonds.

  2. Spread in a greased 9 inch pie plate, making a rim on the sides.

  3. Bake in 275 degree oven 1 hour; remove from oven and cool completely.

  4. Filling:

  5. Mix gelatin, 2 Tbsp. sugar and salt. Beat egg yolks, water and 1/2 cup wine; stir into gelatin mixture. Place over low heat; stir until thickened.

  6. Remove from heat. Stir in remaining wine, lemon juice, and food coloring. Chill until mounds slightly.

  7. Beat egg whites until peaks form. Fold into gelatin; fold in whipped cream. Turn into crust. Chill until set. Garnish with whipped cream.
