Angel Food Cake

Ingredients

  • 1 1/4 cups sifted cake flour
  • 1/2 cup sugar
  • 1 1/2 cup (about 12) egg whites (at room temp.)
  • 1 1/4 tsp. cream of tartar
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1/4 tsp. almond extract
  • 1 1/3 cups sugar

Directions

  1. Measure sifted flour; add 1/2 cup sugar and sift 4 times.

  2. Combine egg whites, cream of tartar, salt and flavorings in large bowl. Beat at high speed of mixer until soft peaks form. Sprinkle in rest of sugar in 4 additions, beating until blended after each addition. Sift in flour mixture in 4 additions, folding in with a large spoon; turn bowl often.

  3. Pour into ungreased 10 inch tube pan. Bake at 375 degrees for 35 to 40 minutes. Cool cake upside-down in pan ion cake rack. Then loosen from sides and remove.
