Ingredients
- 3 pounds sweet potatoes
- 1/2 C butter- divided
- 1/4 C plus 2 T light brown sugar, packed
- 2 eggs
- 2/3 C orange juice
- 2 t cinnamon, divided
- 1/2 t salt
- 1/4 t nutmeg
- 1/3 Call purpose flour
- 1/4 C uncooked old fashion oats
- 1/3 C chopped pecans or walnuts
Directions

Bake sweet potatoes-let stand 5 minutes then

Cut lengthwise and remove pulp into large bowl

Beat 1/4 C butter and 2 T sugar into sweet potatoes

Beat in eggs, orange juice, 1 1/2 t cinnamon,salt and nutmeg-Beat until smooth

Pour into 1 1/2 quart greased casserole

TOPPING;

Combine flour, oats, remaining sugar and 1/2 t cinnamon in a medium bowl

Cut in remaining 1/4 C butter with pastry blender or 2 knives

Stir in nuts

Sprinkle topping over sweet potatoes

Bake 350 degrees for 25-30 minutes or until potatoes are heated through.

Sweet potato gratin can be covered and refrigerated up to 1 day. Let stand at room temp for 1 hour before baking if it was refrigerated
