- Salt pepper and any other rub

**High heat method:

Let meat stand at room temp for 4 hours

Roast at 500 degrees for 5 min per lb = 40 min

Turn off oven and let sit in oven for 2 hours – do not open oven until finished

Low heat method:
-
200 degrees – 250 cook until internal temp is 120-130 take from oven.

When ready to eat roast at 500 degrees for 30 min.
