Ingredients
- 4 1/2 cups all-purpose flour
- 1 tsp. baking powder
- 4 large eggs
- 3 1/2 cups confectioners' sugar
- 1 tsp. anise seeds
- 1/4 tsp. anise extract, optional
Directions

Combine flour and baking powder.

In a large bowl, beat eggs and sugar until thick and light-colored.

Beat in anise seeds and, if using, anise extract.

Gradually blend in dry ingredients,. Cover ad chill at least hour.

On a lightly floured surface, roll out dough to a 1 1/2 inch thickness Press down on the dough with a springerle (embossed) rolling pin or mold to shape cookies.

Cut out shapes made by the rolling pin and place about 1 inch apart on ungreased baking sheets. Cover and let stand overnight.

Heat oven to 350 degrees.

Bake cookies for 25 to 30 minutes, until firm to the touch. Transfer to wire racks to cool. Place cookies in airtight containers and let age for at least 1 week before serving.

Editor’s note: Baking time seems longer than for most cookies. It would be a good idea to check cookies after 12 to 15 minutes.
