Apple Brown Betty

Ingredients

  • 1 1/2 Tbsp. butter
  • 1 cup soft white or raisin bread crumbs
  • 1 Tbsp. granulated sugar
  • 1/4 tsp. cinnamon
  • Pinch cloves
  • Pinch allspice
  • 1/4 cup brown sugar (preferably dark)
  • 2 Tbsp. water
  • 2 tart apples
  • 1/4 tsp. vanilla
  • 1 Tbsp. butter, slivered

Directions

  1. Preheat oven to 350 degrees. Place butter in 3 or 4 cup baking dish; melt in preheating oven. Swirl butter in dish to coat; pour remaining butter over crumbs; toss to mix; set aside.

  2. In a small saucepan mix brown sugar and water. Stir over medium heat until boiling (this can be done in a cup in the microwave); set aside.

  3. Peel, core, and thinly slice apples.

  4. Assemble in layers in baking dish; half of apples, half of sugar-spice mixture, half of crumbs, then remaining apples. Add vanilla to brown sugar syrup; pour over apples. Sprinkle on remaining spiced sugar then crumbs. Top with slivers of butter.

  5. Bake until apples are tender when pierced with cake tester, 35 to 40 minutes. Let rest 20 to 30 minutes. Serve plain or with whipped cream or ice cream sprinkled with nutmeg or cinnamon.
