Grilled Steaks with Greek Relish

Ingredients

  • 2 plum tomatoes, seeded and chopped
  • 1/2 cup chopped red onion
  • 1/3 cup pitted Greek olives
  • 2 tbsp. minced fresh cilantro
  • 2 tbsp. lemon juice, divided
  • 1 tbsp. olive oil
  • 1 garlic clove, minced
  • 1 beef ribeye steak
  • 1/2 cup crumbled feta

Directions

  1. For relish, in a small bowl, combine tomatoes, onion, olives, cilantro, 1 tbsp. lemon juice, oil and garlic.

  2. Drizzle remaining lemon juice over steak. Grill, covered, over medium heat 5-7 minutes on each side or until meat reaches desired doneness. Let stand for 5 minutes; cut in half. Serve with relish and cheese.
