Saucy Beef & Cabbage Supper

Ingredients

  • 1 lb. lean ground beef
  • 3 tbsp. olive oil, divided
  • 8 cups (about 1 small head) chopped cabbage
  • 5 medium carrots, peeled and finely chopped
  • 1 medium onion, chopped
  • 2 large garlic cloves, minced
  • 1 tsp sea salt
  • 1 tsp pepper
  • 1/2 tsp caraway seeds
  • 1/4 tsp ground allspice
  • 1/8 tsp ground cloves
  • 1/2 cup ketchup
  • 2 tsp cider vinegar

Directions

  1. In a 6-qt stockpot over medium heat, cook and crumble ground beef until the meat is on longer pink, 5-7 minutes; drain.

  2. Add 2 tbsp. olive oil; stir in the next 9 ingredients. Cook 5-7 minutes, stirring frequently, until vegetables are crisp-tender.

  3. Stir together ketchup, vinegar and remaining oil until smooth. Pour over the meat and vegetables; cook 5 minutes more.
