Ingredients
- 1 cup all-purpose flour
- 1 cup sugar
- 1/4 cup shortening
- 1 tsp. baking soda
- 1 tsp. vanilla extract
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 1 egg
- 3 cups coarsely shredded, peeled cooking apples (about 3 large apples)
- 3/4 cup coarsely chopped California walnuts
- Lemon Sauce:
- 3/4 cup sugar
- 2 Tbsp. cornstarch
- 1/4 tsp. salt
- 1 egg
- 1 1/2 cup water

Preheat oven to 350 degrees. Grease an 8×8 inch baking pan.

Into a large bowl, measure first 9 ingredients. With mixer at low speed, beat ingredients until just mixed. Add shredded apples; increase speed to medium and beat 2 minutes, occasionally scraping bowl with rubber spatula. Stir in nuts. Pour batter into pan and bake 5 to 50 minutes until top springs back when lightly touched with finger. Serve warm or cold with Lemon Sauce.

Lemon Sauce: In 2 quart saucepan combine all ingredients except lemon juice. Cook over medium-low heat, stirring constantly with wire whisk or hand beater, until mixture thickens (do not boil). Remove from heat and stir in lemon juice.
