Mashed Potatoes with Dill

Ingredients

  • 2 lbs. small red potatoes
  • 4 garlic cloves, smashed
  • 1/2 cup buttermilk
  • 3 tbsp. butter
  • 2 tbsp. chopped dill
  • 2 scallions, sliced
  • salt and pepper, to taste

Directions

  1. Place potatoes and garlic in a pot; cover with salted water. Bring to a boil, then simmer until tender, 15-20 minutes. Reserve 1 cup of cooking water; drain.

  2. Mash the potatoes with 1/2 cup cooking water, buttermilk, butter, dill and scallions, adding the remaining cooking water as needed. Season with salt and pepper.
