Apple-Cinnamon Granola

Ingredients

  • 5 cups oaqts, uncooked
  • 1/2 cup cashews, chopped fine
  • 1/2 cup honey
  • 1 tsp. vanilla extract
  • 1 Tbsp. firmly packed brown sugar
  • 1 cup flaked coconut
  • 1/2 cup wheat germ
  • 1/3 cup vegetable oil
  • 1 1/2 cups chopped dried apples

Directions

  1. Preheat oven to 350 degrees. Spread oats in an ungreased 13 × 9 inch baking pan and heat 10 minutes.

  2. Combine oats, coconut, cashews, wheat germ and cinnamon in a large bowl. Stir in honey. oil and vanilla extract thoroughly. With large spoon.

  3. mix until dry ingredients are well-coated. Spoon into same baking pan and bake 30 to 35 minutes, stirring often to brown evenly. Cool.

  4. Toss apples in brown sugar. Stir apples into granola until crumbly. Serve as a breakfast cereal or a snack with cold milk. Store in a tightly covered container in refrigerator.

  5. makes 10 cups

  6. 1 cup raisins, currents or chopped dried apricots may be added, if desired.
