Apple-Cranberry Breakfast Pudding

Ingredients

  • 4 cups milk
  • 3/4 cup firmly packed brown sugar, divided use
  • 1/2 tsp. salt
  • 1 cup fresh cranberries, halved, Plus extra for garnish
  • 8 oz. golden raisins
  • 2 cups large-flake rolled oats
  • 4 to 5 Red Delicious or other apples, cored, sliced thin but not peeled (reserve a few for garnish

Directions

  1. Heat oven to 350 degrees. Combine milk, 1/2 cup sugar and the salt in a microwave- safe large bowl.

  2. Heat in microwave on high until very hot but not boiling, 6 to 8 minutes.

  3. Shake remaining sugar and cranberries in a plastic bag. To the microwave mixture, add cranberries, raisins, oats, apples and nuts; mix well.

  4. Place in 2 (1 1/2 quart) soufflé dishes or 1 (3 quart) casserole and bake for 30 minutes. Stir before serving.

  5. Mix the sour cream with a little cinnamon sugar. Top each serving with a dollop and a few extra cranberries and apple slices.
