Alexandra Paul’s Apple Crumble

Ingredients

  • sour-cream sauce:
  • 1 cup sour cream
  • 2-4 Tbsp. granulated sugar
  • 1 lemon rind, rated
  • 1/4 to 1/2 tsp. freshly ground nutmeg
  • Apples:
  • 4-6 large, tart cooking apples
  • 3 Tbsp. granulated sugar
  • 1 to 2 tsp. cinnamon
  • juice of 1 lemon
  • Crumble topping:
  • 1 cup bleached white flour
  • 1/2 cup dark brown sugar
  • 1/4 tsp. salt
  • 1 stick butter (room temperature)

Directions

  1. Sour Cream Sauce: Mix all ingredients together and refrigerate for several hours.

  2. Apples: Peel and core apples,, cutting each into 8 pieces. Arrange tightly in buttered 12 × 9 × 2 inch oval baking dish. Mix sugar and cinnamon. Sprinkle apples with lemon juice, then with sugar-cinnamon mixture. Set aside.

  3. Mix flour, sugar, and salt in large bowl. Cut in butter. Mix thoroughly. Cover apples with topping, dot with butter. Bake at 400 degrees until top is brown and apples are bubbling (20 to 25 minutes). Serve warm, topped with dollop of sour-cream sauce.
