Apple- Apricot Compote

Ingredients

  • 3/4 cup dried apricots
  • 1 cup hot apple juice or cider
  • 1 crisp green or red apple, quartered, cored and diced
  • 2 Tbsp. chopped, toasted walnuts
  • 1 Tbsp. cinnamon sugar
  • 1/2 pint raspberries or strawberries, optional

Directions

  1. Soak dried apricots in hot juice overnight. Drain, slice in half and place in mixing bowl. Add apple and walnuts; toss to blend. Sprinkle with cinnamon sugar and toss to blend again/ Divide between two stemmed glasses. Spoon berries over each serving. Serve immediately.
