Ingredients
- 2 large cooking apples
- 1/2 cup minced onion
- 1 tsp. curry powder
- 1/4 tsp. nutmeg
- 1 cup chicken stock
- 1/2 cup apple juice
- 1/2 cup heavy cream
- Grated apple
- Ground cinnamon
Directions

Peel, core and dice apples. Saute apples in a nonstick pot on medium with 1/2 cup minced onion until tender.

Add curry powder, nutmeg, chicken stock and apple juice. Simmer for 10 minutes. Remove from heart and cool 5 minutes. Puree until smooth.

Blend in heavy cream. Refrigerate 1 hour. Adjust seasoning with curry and salt. Sprinkle with grated apple and ground cinnamon.
