Apple Curry Bisque

Ingredients

  • 2 large cooking apples
  • 1/2 cup minced onion
  • 1 tsp. curry powder
  • 1/4 tsp. nutmeg
  • 1 cup chicken stock
  • 1/2 cup apple juice
  • 1/2 cup heavy cream
  • Grated apple
  • Ground cinnamon

Directions

  1. Peel, core and dice apples. Saute apples in a nonstick pot on medium with 1/2 cup minced onion until tender.

  2. Add curry powder, nutmeg, chicken stock and apple juice. Simmer for 10 minutes. Remove from heart and cool 5 minutes. Puree until smooth.

  3. Blend in heavy cream. Refrigerate 1 hour. Adjust seasoning with curry and salt. Sprinkle with grated apple and ground cinnamon.
