Chocolate Mint Pie

Ingredients

  • 2 (1.3 oz.) pkg. sugar-free chocolate pudding mix (not instant)
  • 2 Tbsp. cocoa powder
  • 1 tsp. sugar
  • 2 1/2 cups milk
  • 1 Tbsp. vanilla extract
  • 1/2 tsp. peppermint extract
  • 1 Tbsp. butter
  • 1 9-inch baked pie crust
  • Whipped cream as garnish
  • Crushed peppermint candy (optional)

Directions

  1. In a saucepan, whisk chocolate pudding mix, 2 Tbsp. cocoa powder, sugar, milk, vanilla extract and peppermint extract over low heat until smooth and thick, about 5 minutes.

  2. Turn off heat and whisk in butter until pudding is silky. Pour into baked pie crust and let cool 10 minutes.

  3. Freeze 4 to 6 hours, until completely set. Top whipped cream and crushed peppermint candy if desired.
