Apple-Flounder Bake

Ingredients

  • 1 pkg. Betty Crocker scalloped potatoes
  • 3 cups water
  • 1 jar (4 1/2 oz.) sliced mushrooms, drained
  • 1 medium apple, cut into thin wedges
  • 1 medium onion, chopped (about 1/2 cup)
  • 1/4 tsp. dried thyme leaves
  • 2 Tbsp. margarine or butter
  • 1 cup water
  • 2 tsp. lemon juice
  • 1 lb. frozen flounder fillets, thawed and drained

Directions

  1. Heat potatoes and 3 cups water to boiling in 2-quart saucepan; reduce heat . Simmer uncovered until tender, 15 to 20 minutes; drain thoroughly.

  2. Cook mushrooms, apple, onion and thyme in margarine in 2-quart saucepan until tender; stir in 1 cup water, the Sauce mix and lemon juice. Heat over medium heat, stirring constantly, until sauce thickens. Stir in potatoes, remove from heat.

  3. Cut fish into 6 serving pieces. Arrange in ungreased rectangular baking dish, 13 × 9 × 2 inches. Top fish with potato mixture. Bake uncovered in 400 degree oven, until fish flakes easily with fork, 15 to 20 minutes. Garnish with snipped parsley and lemon twists if desired.
