Ingredients
- 2 cups sugar
- 2 strips lemon zest
- 6 golden Delicious apples, peeled, cored, and sliced
- 1 cup heavy cream
- 1 1/2 Tbsp. sugar
- 2 Tbsp. apricot brandy

Combine the sugar, 3 cups water, and lemon zest in a large heavy saucepan. Bring to a boil over high heat, stirring until the sugar dissolves. Reduce heat to ,medium-low, cover, and simmer the syrup 5 minutes.

Add the apples, cover, and simmer 15 minutes, or until the apples are tender. Drain the apples (store syrup covered, in the refrigerator, for another use).

Puree the apples through a food mill into a large bowl, cover, and chill thoroughly.

Whip the cream in a chilled bowl with the sugar and apricot brandy until it holds soft peaks. Fold in the apple puree. Spoon the apple fool into chilled parfait or sherbet glasses.
